This year for Neal’s birthday, my parents bought him a Cuisinart Griddler!
Since meeting Neal, he’s always talked about wanting to make panini sandwiches at home and how great having a panini press would be. With this awesome kitchen appliance, which has interchangeable plates, you can grill, press, and sear just about anything.
Neal and I are going to break out the Griddler and christen her on Sunday night, so I’ve been searching for the perfect “first panini”. Iowa Girl Eats makes some legen…wait for it… dary, legendary, paninis/grilled sandwiches, so I started with her site.

After drooling over Kristin’s paninis, I headed over to my Pinterest for some more inspiration!
There are some awesome panini recipes out there, but in all honesty, I think you just have to get creative. There are so many amazing ingredients out there and so many different combinations which can turn into the perfect panini! Here’s what you need…
- Protein or Hearty Vegetable
- Any additional mixins
I’m really looking forward to making paninis with Neal on Saturday. I’m so glad he finally got a panini press and I’m sure we’ll make lots of yummy meals on that thing!
Today’s Meal Plan
Breakfast – 2 eggs, 1 slice cheese, 2 slices of bread, ham, and a cup of coffee (10PP)
Lunch – Cinnamon steel cut oats, 1/4 cup of dried cranberries, and a cup of coffee (10PP)
Dinner – Trader Joe’s Vegetable Melange and a little pasta (??PP)
