Today was one of the best days I’ve had in a while. It started off Friday night with one of my favorite dinners; sautéed spinach and garlic with pasta and Parmesan cheese.
First I heat a little olive oil in a pan and add a clove (or two) of garlic.
Sautee the garlic for about 2 minutes, until soft, and then add the fresh spinach.
The spinach will wilt rather quickly, which is what makes this one of my go-to quick dinners.
With a little pasta and a little Parmesan cheese, this is the perfect dinner.
A little wine never hurt anybody either.
I had a really hard time getting out to bed this morning and although sleep sounded really good, I couldn’t wait to get to spin this morning!
Today I went to CycleStudio for their Wheels UP! class. Wheels UP! is “will have you ripped-roaring and ready for the day with a dynamic blend of energizing music and rocking moves” — Just how I wanted to start off my winter break!
The class was 1 hour long and was full of hip hop and rap music, my favorite!! Although I love oldies, when I workout I want a solid beat and a rhythm that makes me want to push myself. Rap does that for me, so I when 50 cent and Jay-Z came on, I knew it was going to be an awesome class!
My garmin said that I burned 1360 calories….. which is crazy. Either way, I got a great workout in! Afterwards I grabbed a cup of iced coffee from BUZZ Bakery.
The rest of the day was filled with shopping, hanging out with my dear friend Kristi and her baby boy Carter, taking a nap, wrapping gifts, and watching Little Women. It was an awesome day, a fantastic way to start off the holiday break.
Tomorrow should be just as awesome…
- A little last minute Christmas shopping
- Going to the Redskins game at Fedex Field (Redskins vs. Vikings)
- Packing for our trip to Cleveland
- Baking my Grandmother’s Jewish Coffee Cake
- Candlelight service at church
I wish each of you a Merry Christmas and Happy Holidays! Please travel safe and enjoy your time with family and friends. Happy Christmas Eve Eve and Happy Christmas Eve!

Merry Christmas Eve!
Great dinner! It’s so funny to me that a whole bag of spinach doesn’t make much once it’s wilted.
I have always wanted to try a spin class. Just might have to do that!
You should definitely give it a try. Spin is awesome! Most studios have drop in rates, $10-$20 a class. Even if it’s just a treat, it’s totally worth it!!
I love Little Women. It’s one of my favorite books and movie
I’m not going lie, Amy was always my favorite!
I wouldn’t be surprised that you burned that many calories during spin. I’m not a spin junkie but whenever I go, it never fails to kick my ass!
