Today was one of the best days I’ve had in a while.  It started off Friday night with one of my favorite dinners; sautéed spinach and garlic with pasta and Parmesan cheese.

First I heat a little olive oil in a pan and add a clove (or two) of garlic.

Sautee the garlic for about 2 minutes, until soft, and then add the fresh spinach.

The spinach will wilt rather quickly, which is what makes this one of my go-to quick dinners.

With a little pasta and a little Parmesan cheese, this is the perfect dinner.

A little wine never hurt anybody either.

I had a really hard time getting out to bed this morning and although sleep sounded really good, I couldn’t wait to get to spin this morning!

Today I went to CycleStudio for their Wheels UP! class.  Wheels UP! is “will have you ripped-roaring and ready for the day with a dynamic blend of energizing music and rocking moves” — Just how I wanted to start off my winter break!

The class was 1 hour long and was full of hip hop and rap music, my favorite!!  Although I love oldies, when I workout I want a solid beat and a rhythm that makes me want to push myself.  Rap does that for me, so I when 50 cent and Jay-Z came on, I knew it was going to be an awesome class!

My garmin said that I burned 1360 calories….. which is crazy.  Either way, I got a great workout in!  Afterwards I grabbed a cup of iced coffee from BUZZ Bakery.

The rest of the day was filled with shopping, hanging out with my dear friend Kristi and her baby boy Carter, taking a nap, wrapping gifts, and watching Little Women.  It was an awesome day, a fantastic way to start off the holiday break.

Tomorrow should be just as awesome…

  • A little last minute Christmas shopping
  • Going to the Redskins game at Fedex Field (Redskins vs. Vikings)
  • Packing for our trip to Cleveland
  • Baking my Grandmother’s Jewish Coffee Cake
  • Candlelight service at church
