Oh what I would give to be locked inside my new apartment for 3 days and to be given the chance to get everything set up and organized. Last night after work I tackled the kitchen… lets just say it was a hot mess before I started.
I’ve always loved organizing the kitchen but boy is it tough to decide where to put things sometimes. In the end I kept dishes, glasses, silverware, and coffee cups on the right side of the kitchen where the sink and dishwasher are and then put food and all baking/cooking tools on the left side of the kitchen.
Two hours later, the kitchen was clean and put together! I just love this kitchen and am incredibly excited to start cooking in it. Last night for dinner I made Neal and I chicken quesadillas. I used a new to me product, La Tortilla Factory’s 100 calories tortillas. They were just ok in my opinion. I know I can be a tortilla snob, since I’m from San Antonio but these tortillas did get rather tough when heated.
In the past I have made Neal and I each a full quesadilla, each having 6 pieces, but last night I decided to make one quesadilla and to split it. Could we each eat a whole quesadilla? Sure, but having half of one plus a side of veggies was just as filling. Remember, little changes can equal big results!
This morning for breakfast I made a fresh fruit smoothie to get my day going.
- Fresh strawberries
- 1/2 a banana
- coconut water
- vanilla protein powder
- Chobani 0% strawberry Greek yogurt
- a pinch of Xanthan Gum to thicken the smoothie
The smoothie was the perfect breakfast as I knew I was going to lunch with a friend today. At Chef Geoff’s I got the black bean burger with a side of fries. The black bean burger was FANTASTIC. As many of y’all know, I am obsessed with beans. This burger was pretty much a refried black bean sandwich. I just love how creamy beans can be and this burger lived up to that!
I have a special dinner up my sleeves tonight and can’t wait to share it with y’all tomorrow!
So now that I’m starting to get settled into our new place, I am eager to get back into my Body Revolution workouts. I have done my fair share of workouts these past 4 days (walking over 16 miles in two days) but it’ll be good to get back into my regular routine and to be back to lifting things other than boxes and furniture. Aside from being sleepy, I am really feeling great post move. I will say though, I can not wait to get my hair dyed this week. Look at my roots… AHHH! A trip to the nail salon is also in order for tonight!

- Go to the nail salon
- Cook dinner for Neal
- Put away all of our clothes
