Theodore completely changed my week, but boy do I adore him! My plans to take multiple classes post work quickly changed after getting our puppy, but that hasn’t stopped me from moving! Walk. Walk. Walk. I feel like it’s all I do but then I look down and see the cutest thing ever and realize it’s a total win!
Monday I took a PM spin class. To be honest, it was just meh. I’m not the biggest fan of the instructor so although I pushed myself and got a good workout I could not wait for the class to be over. I probably won’t take another one of her classes again.
Tuesday morning I went for a 2 mile run on the treadmill before work. It was a good run, moderate pace, and in the books all before 7AM. The rest of the week was spent walking! I’ve been taking Theodore out multiple times in the morning and then multiple times in the evening. I honestly haven’t spent this much time outside in a long time. It’s pretty awesome!
Although I didn’t get to take any other classes this week, I have a pretty wicked class tomorrow which you’ll hear more about on Monday!
On the eats side, Neal and I enjoyed every bite of Salad Week! Deciding to eat a salad each night for dinner was such an awesome idea for us and we really enjoyed it. Honestly, I think it might stay around. Although I’ll incorporate other dinners into our weekly plans, we enjoyed these salads so much that I definitely want to create more!
Monday- Spice rubbed pork tenderloin salad with butter lettuce, tomatoes, and cucumbers.
Tuesday- Spring mix, Perdue Simply Smart chicken, blue cheese, celery, and light buffalo ranch dressing
Wednesday- Spring mix topped with grilled buttermilk ranch chicken breast, tomatoes, cucumbers, bell peppers, and buffalo ranch dressing.
Thursday- A repeat of Tuesday but with more veggies! We added tomatoes and cucumbers.
For tonight… we’ll have to see. My steak and basalmic reduction salad went down the drain as our steak went bad, bummer! We’ll have to get creative but that’s what it’s all about.
