It’s hard to believe that there are just three weeks left of summer, 3 more weeks until the end of my scaleless summer, and 3 weeks until Fitbloggin! I am really determined to have a successful Scaleless Summer and have been working hard since returning from the honeymoon in order to see a loss on the scale come September 21.

Breakfast -
Lately I’ve really been enjoying egg sandwiches on Ezekiel Bread. I know it might seem odd, but I love egg whites on the cinnamon raisin bread for breakfast.
I toast up two slices of bread and cook 2 egg whites in a little cooking spray in a small pan.
I flip the egg after a few minutes and then place the cooked eggs between the two slices of bread. It’s a perfect combination of sweet and salty.
Lunch -
I love, love, love BOCA Spicy Chik’n Patty and have been loving having it for lunch here and there. I try not to have the Ezekiel Bread twice a day, so I usually either have the egg sandwich or my spicy chik’n sandwich in a day.
When I pack my lunch I just throw a frozen patty between two slices of frozen plain Ezekiel Bread, wrap it in a paper towel and then all I have to do is throw it in the microwave for a minute when it’s time for lunch! I’ve also been enjoying a yogurt with lunch, adding a little more protein to my day.
Dinner -
After last week’s “Salad Week” I’ve kinda been obsessed with salads! I’ve continued the trend and have thrown together a salad each night, mixing up the veggies and then adding in a protein.
One of my new finds, thanks to Neal, are these Perdue Simply Smart nuggets. I just heat them up, dice them up, and throw them on my salad. They are awesome!
Salads can be so fun and you can do so much with them!! I encourage y’all to take advantage of the summer veggies and create some new and fun salads.
A scoop or two of light ice cream has rounded out an evening or two since the weekend, adding a sweet treat to my day.
It has been a really great week so far and am working hard to have a well balanced week, working out each day and eating well each meal.

Good job on the good eats! I somehow managed to make a cheeseless sauce for my quinoa pasta last night that actually tasted like cheese! It was amazing and now I’m imagining all sorts of things I can use it on, particularly nachos!

Fry an egg like you did, place it on an english muffin or toast, spread a bit of jam on one side, add some cheese (optional) and ta da, a great sweet and savoury breakfast. It’s my new favourite.
Troy and I have started using those same chicken nuggets! We toss them on salads, make crispy chicken wraps, make A SUPER EASY chicken parm with whole wheat pasta. It possibilities are endless. I can’t say enough good things about them. Usually pre packaged stuff like that has too much breading, but they are perfect!

Yes! Love those Boca spicy chik’en patties. The flavor of the spice is just so good!
I love sweet and salty combos too–now I want to make tofu scramblers and eat them with cinnamon raisin bread!

I need to try both the chicken nuggets and the boca chicken! I haven’t had either… but they sound so good!

My favorite meal this week was crock pot turkey meatloaf and spaghetti squash tomato bake! I made the spaghetti squash bake for the first time and it was SO good. It will definitely be one of our regular side dishes!
