Last week I found a wonderful recipe on Steph’s Bite by Bite for Apple and Peanut Butter Breakfast Quinoa. Now quinoa kinda freaks me out… those little seedlings but I thought coconut breakfast quinoa would be fantastic! I took the inspiration from Steph’s blog and adapted it a bit.
Coconut Breakfast Quinoa
1/2 cup dry quinoa
1 cup light coconut milk (canned)
1/2 cup of water
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon bourbon vanilla
2 tablespoons peanut butter
1/2 and apple, diced
In a small saucepan combine quinoa, water, and coconut milk. Next add cinnamon, nutmeg vanilla and bring to a boil. Reduce the quinoa to a simmer, cover with lid, and cook for 25 minutes. Fluff with a fork before serving.
I topped my quinoa with peanut butter and apples and opted not to add walnuts, though you could. It was perfect!
Next time, I’m adding shredded coconut! This is going to be added to my breakfast rotation for sure!

Breakfast – Coconut Breakfast Quinoa and 2 cups of coffee with fat free half and half
Lunch- Leftover whole wheat orzo salad
Dinner- Salad made with romaine, mushrooms, chicken, and light buffalo ranch dressing

I think this could be a great lunch to take to work as well…cook ahead of time, add apples at work…really trying to add quinoa into my diet but plain is well, too plain. Peanut butter makes anything better!
OH MY YUM. I am SO making this!! I even have that same coconut milk!!
