Sunday was such a B-E-A-Utiful day! Saturday night I slept with the windows open and woke up to a perfectly crisp apartment. After 2 morning walks with Theodore, I met up with Katy for coffee at Caribou Coffee. If you haven’t seen it yet they sell a Pumpkin Chai that is to die for!
The park was just beautiful and the weather couldn’t have been any better.
As I had to leave to pick up Neal at the airport, we were only able to walk for a little over an hour but it was awesome! Nothing better than working out with friends and having time to talk.
After a long flight delay, I was finally able to pick up Neal from the airport around 3PM. I couldn’t wait to have him back home!! Neal just makes my life so much fun and it’s hard not being able to share things with him throughout the week. Thankfully he’s back for a while!
For dinner, I made Neal Delallo Whole Wheat Linguine with their Creamy Vodka sauce.
After the pasta cooked I added 1 tsp of olive oil, a pink of salt and pepper, and a good amount of red pepper flakes. I then topped the pasta with 1/2 cup of the vodka sauce.
I can not begin to express how amazing this dinner was. I have been enjoying Delallo products for a few weeks now and I can not say enough about their whole wheat pastas and their sauces. This vodka sauce, though higher in fat and in calories, was robust and the perfect balance of cheese, tomato, and vodka. If you see their products at the store, you’ve got to try them! You wont regret it!
My Eats Yesterday
Breakfast- 2 pieces of Ezekiel Cinnamon Raisin Bread and 2 eggs
Snack- Medium skim pumpkin chia latte from Caribou Coffee
Lunch- 2 pieces of Ezekiel bread topped with a spicy veggie patty and a side of grapes
Dinner- Delallo Whole Wheat pasta with Vodka Sauce
(Where are the veggies?? — need to work on getting more veggies in my diet each day. Thankfully we have salads planned for dinners this week)
