I am a pretty happy lady today!! After 3 weeks of weight gain, I was thrilled to step on the scale and see a loss today.
This week I really focused on the things that have kept me at my current weight, specifically eating too much cheese, not eating enough vegetables, and the need to limit sweets/desserts.
I really enjoyed working to eat more vegetables and how colorful it can make your plate!
Last night I made myself a bell pepper Caesar salad.
I started by dicing a red bell pepper, orange bell pepper, and a yellow bell pepper.
Next I added 1 1/2 tbsp of Ken’s Lite Caesar dressing to the bowl of diced bell peppers.
Salads don’t have to include a leafy vegetable. Sometimes it’s fun to make a salad with just bell peppers, tomatoes, or cucumbers and to nix the lettuce.
Changes like adding more veggies helped me to lose 2.8 pounds this week!
Starting Weight: 234.6 lbs
Last Weigh-in: 226.0 lbs
This Weigh-in: 223.2 lbs
Difference: -2.8 lbs
Total Weight Loss: -11.4 lbs
My next goal is to get out of the 220′s!! I would love to see 219 before Christmas. It could be tough with all of the holiday parties and Neal’s birthday celebration on the agenda over the next two weeks, but I have the tools needed to be successful.
I am going to stay focused and work towards my secret New Years goal!!! I want it bad.

Look at you awesome lady! It is SOOO hard to continue on after gains and you pushed through it. You should be incredibly proud. I, too, have a New Year’s goal and I fully intend to make it so that I won’t let the holidays kill me. Congrats on your loss!!!!
Love salads with no lettuce. I’m not a big fan of lettuce so I often make a salad with tomatoes, cucumbers, hard boiled egg, onions and a couple of hot peppers.

I love making salads without the lettuce. i find that it keeps salads fresh and not boring. One of my favorites is a cucumber/ tomato/ red onion salad with fat free feta and Kraft fat free Italian. Or just cucumbers with Annies light “gingerly” dressing and sesame seeds. But as much as I love eating sliced bell peppers raw- I never thought of using them as the base for a salad- great idea!

Way to go Ashley! I’d never thought of making a salad without greens but I really like that idea since I usually like the ingredients more than the greens!

Woo Hoo!!! I have been thinking alot about your post on what foods are keeping me from losing. Yesterday was an emotional day….good and bad emotions over the same situation. I worked my was through it using food. UGH!! I know better. Today I woke up and at first thougth I should just blow the whole weekend in regards to my food. Then GOOD TARA rang in and said she wasn’t having it. Two meals down and I am eating clean and feeling so much better about my choices and my emotions.
