How can you not love Melissa McCarthy? I’d love to interview her and ask her about her self confidence and love for her body. To me, she screams confidence, which I love!
In my opinion, being confident is one of the keys to feeling great during and after the holiday season. The reality is, you or I may gain weight over the next 2 weeks due to the increase of sweets and holiday foods but we don’t have to allow this to discourage us.
My hope is that over the next few weeks each of us will find time to be with friends, family, and loved ones. During that time you may be faced with temptations but I hope that you will remain confident, will chose wisely, and in the end will enjoy every moment of this holiday season (no matter what you eat).
One thing that tempts me each year is Christmas cookies, but you know what, I LOVE baking them. Will I reach a point where I no longer make Christmas cookies? No way! Instead, I will enjoy baking them but will strive to limit my cookie intake.
Last week I made some DELICIOUS Trader Joe’s Peppermint Bark Cookies.
1 cup unsalted butter, at room temperature
1 cup light brown sugar
1/2 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
3 cups all-purpose Gold Medal flour
1/2 teaspoon salt
3/4 teaspoon baking soda
1 bag of peppermint bark pieces
In a large bowl cream together butter, brown sugar, and granulated sugar. Add eggs and vanilla to the butter mixture, combining thoroughly.
Next add in dry ingredients (flour, salt, and baking soda). Combine well and then stir in 1 full bag of Trader Joe’s Peppermint Bark pieces. You can also chop 2-2 1/2 cups of peppermint bark if you do not live near a Trader Joe’s.
Scoop dough into 1 tbsp balls and bake at 350 for 14 minutes.
This was my first time baking with peppermint bark but I will definitely be baking with it again in the future. These peppermint bark cookies were fantastic!
So when your favorite holiday treats come your way, remember that you are in control of what you eat. Whether you gain weight, lose weight, or maintain your weight this holiday season, have confidence in who you are and the decisions your make.
