Sunday afternoon I made a delicious healthy bacon and tomato quiche inspired by the 21 Day Sugar Detox.
I started by cooking 8 slices of bacon in a saute pan.
While the bacon cooked I scrambled together 12 eggs. A little half and half and salt and pepper perfected the eggs.
To the eggs I added 3 cups of chopped spinach and 1 cup chopped basil.
I then sprayed the 13 x 9 baking dish with cooking spray and then added the egg and veggie mixture to the pan.
To the top of the eggs I added the cooked bacon and halved cherry tomatoes.
I then cooked the quiche uncovered at 375 degrees for 45 minutes (until the quiche was cooked through).
The quiche has been the perfect breakfast all week for Neal and me. I take a 4×4 inch square of the quiche with me to work in a Glad container and then heat it up when I get to my desk. It has been great after my early morning workouts!
Healthy Bacon and Tomato Quiche
- 8 slices of bacon
- 3 cups chopped spinach
- 1 cup of basil
- 1 pint cherry tomatoes
- 12 eggs
- 1/4 cup half and half
- Salt and pepper to taste
