Healthy Bacon and Tomato Quiche

Sunday afternoon I made a delicious healthy bacon and tomato quiche inspired by the 21 Day Sugar Detox.

I started by cooking 8 slices of bacon in a saute pan.

While the bacon cooked I scrambled together 12 eggs.  A little half and half and salt and pepper perfected the eggs.

To the eggs I added 3 cups of chopped spinach and 1 cup chopped basil.

I then sprayed the 13 x 9 baking dish with cooking spray and then added the egg and veggie mixture to the pan.

To the top of the eggs I added the cooked bacon and halved cherry tomatoes.


I then cooked the quiche uncovered at 375 degrees for 45 minutes (until the quiche was cooked through).

The quiche has been the perfect breakfast all week for Neal and me.  I take a 4×4 inch square of the quiche with me to work in a Glad container and then heat it up when I get to my desk.  It has been great after my early morning workouts!


Healthy Bacon and Tomato Quiche

  • 8 slices of bacon
  • 3 cups chopped spinach
  • 1 cup of basil
  • 1 pint cherry tomatoes
  • 12 eggs
  • 1/4 cup half and half
  • Salt and pepper to taste

    How’s your 21DSD going? Any withdrawal side effects?? I’m about 30 pages into the book right now. I think I’m going with the level 1 program. I can’t give up my beloved quinoa!! I LOVE the pages of full color recipes though – can’t wait to try some out, this one sounds yummy!

    I am not doing the full 21dsd program. I am just limiting the amount of sugar and carbs I eat when I can. Anything extreme isn’t healthy for me. But the 21dsd helped me see how much of my diet was sugar and carb based.

    I dont get why Quinoa would be omitted on a sugar detox?

    Love the Quiche! I make quiches alot to bring to work. I love to make one with a ‘crust’ of quinoa. Just layer 1/2 cup -1 cup of cooked quinoa to the bottom of the pan before adding the eggs. Its soo good!
    I also will add in some cottage cheese for extra protein.

    I have no idea where this Quinoa talk is coming from. Boy do rumors roll quickly.

    So the 21dsd is split into 3 levels. Level 1 allows for legumes where as level 3 recommend removing them (it’s about how your body breaks them down). You can definitely have quinoa.

    I make all different kinds of crustless quiches all the time, but I’ve never thought of making a bacon and tomato one. Bacon, tomato and eggs is such a great combo. I have to make this now. Thanks for the recipe!
