Turkey Fiesta Tacos
I love, love, love Mexican food! One of my favorite dishes are my version of turkey tacos.
Ashley’s Turkey Fiesta Tacos
- 1 onion
- 1 TBSP argan oil
- 16oz ground turkey
- 1 packet of Simply Organic Southwest Taco seasoning
- 1 can diced tomatoes
- 1 can black beans
- 1 can pinto beans
- 1 can fat free refried beans
- 1 can green chilies
To start, heat 1 TBSP of argan oil. Argan oil is “valued for its nutritive, cosmetic and numerous medicinal properties” according to Wikipedia. I love that it is known to improve your skin, hair, and nails but I also love that it only has 2 grams of fat in it per serving. Sign me up!
Saute the onions for about 10 minutes or until translucent. Once the onions are cooked, add the 16oz of ground turkey.
Brown the turkey for 10-12 minutes before adding the taco seasoning and continue to cook until turkey is cooked through (about 5 additional minutes).
I loved this seasoning packet, one of the goodies I got from Swanson Health Products a few weeks ago.
The seasoning packet tells you to add 1/2 cup of water to the mix, but I add a can of tomatoes (un-drained) instead. The liquid from the tomatoes replaces the water.
Next add both cans of whole beans (rinsed) and the can of green chilies.
And last but not least, add the can of refried beans!! I love, love, love refried beans and love that adding it to the turkey tacos adds a bit of creaminess.
YUMMY!! I know it looks more like chili, but trust me, these tacos rock.
While I was cooking, I added all of the ingredients to my My Fitness Pal account, determining that 1 cup of the taco mixture comes out to 237 calories. Pairing it with 2 Trader Joe’s Reduced Carb Whole Wheat Flour Tortillas brings my meal to 327 calories (45 calories a tortilla).
To each taco I added a spoonful of Trader Joe’s Avocado Salsa Verde for just a little extra kick.
Since I’ll be eating these leftovers for the next 4 days, I had better like them and boy do I!
